Here is a step-by-step recipe to make Samosas:

For the dough:


2 cups all-purpose flour

2 tablespoons oil

1/2 teaspoon salt

Water, as needed

For the filling:


2 medium potatoes, boiled and mashed

1/2 cup green peas, boiled

1/2 teaspoon cumin seeds

1/2 teaspoon coriander powder

1/2 teaspoon amchur (dried mango) powder

1/2 teaspoon garam masala

Salt, to taste

1/2 teaspoon red chili powder (optional)

2 tablespoons oil

Instructions:


To make the dough, in a large bowl, mix together the flour, oil, and salt. Gradually add water and knead into a smooth and soft dough. Cover and set aside for 30 minutes.

To make the filling, heat oil in a pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds.

Add the boiled green peas and mashed potatoes to the pan, along with the coriander powder, amchur powder, garam masala, salt, and red chili powder (if using). Stir to mix everything well.

Divide the dough into 10-12 equal-sized balls. Roll out each ball into a thin circle, about 5-6 inches in diameter.

Cut each circle in half to form a semi-circle.

Take one of the semi-circles and bring the straight edge together to form a cone shape. Fill the cone with 1-2 tablespoons of the filling.

Seal the open end of the cone by brushing it with water and pressing the edges together. Repeat the same with the rest of the dough and filling.

Heat oil in a saucepan over medium-high heat for deep-frying. Once the oil is hot, carefully add the samosas and fry until golden brown, about 3-4 minutes.

Drain on paper towels and serve hot with chutney or mint sauce.
